El Cortez is our premium brown shell-on shrimp. Brown shrimp tend to be in found in deeper waters with higher salinity than the white shrimp. This species has a golden brown or tan shell with a larger vein. The meat is white with a delicious, rich flavor and firm texture. El Cortez spawn year-round but the main harvest occurs in late September through early April.
